Antibiotic Free Turkey Lettuce Wraps
Wrapping this tasty ground turkey mixture in lettuce leaves is a healthy alternative to tortillas. You can also serve this mixture on a mound of shredded lettuce and top with peanuts! Of course, this would also be delicious with ground chicken or ground grass fed beef!
4 green onions, sliced
2 garlic cloves, crushed through a press
1/4 lb. fresh mushrooms, chopped
1 – 8 oz. can sliced water chestnuts, drained and chopped
4 carrots, peeled and shredded
3 tbsp. dry sherry
3 tbsp. soy sauce
1 tsp. sesame oil
1/2 tsp. ground ginger
1/4 tsp. black pepper
2 tsp. cornstarch
1/2 cup chicken broth
3 tbsp. hoisin sauce (optional)
1 head lettuce, separated into leaves
1/3 cup chopped dry-roasted peanuts
In a large skillet, cook turkey, green onion and garlic, stirring often to break up large chunks, until turkey is no longer pink, about 5 to 7 minutes.
Add mushrooms, water chestnuts and carrots. Cook, stirring often, until mushrooms are just tender, 3 to 4 minutes.
Add sherry, soy sauce, sesame oil, ginger and pepper. Stir together cornstarch and chicken broth until blended. Stir into skillet. Heat, stirring constantly, until sauce boils and thickens.
To serve, spread a little hoisin sauce, if desired, on a lettuce leaf. Spoon turkey mixture onto lettuce leaf, sprinkle with a few peanuts, roll up and enjoy!
Note: If you want to spice it up, add a little crushed red pepper flake to the turkey while cooking.
