Healthy organic chicken makes this recipe delicious!
6 skinless, boneless Topline Foods organic chicken breasts
2 – 10 oz. pkgs. Topline Foods organic spinach, thawed, drained and chopped
14 1/2 oz can diced tomatoes, drained
5 oz shredded fontina cheese (mozzarella is fine as well)
salt and pepper
2 tbsp olive oil
In a bowl combine spinach, tomatoes and cheese and season with salt and pepper to taste.
Cut a deep pocket in chicken breast, stuff with the mixture. Heat olive oil on medium heat and add chicken. Cook each breast until well browned, 13-15 minutes. Use an instant read thermometer to make sure the chicken reaches 165 degrees. If the chicken needs to cook through and is already brown, you can finish in a 375 degree oven for an additional 5-10 minutes or until cooked through.
This recipe serves 6.
