Delicious clean eating Chicken Mango Salad, a perfect post-workout meal.
6 oz of Topline Foods organic chicken breast, cooked
1 small mango
1 small shallot
3 tbsp of low-fat Greek Yogurt
1 tsp curry powder
1 tsp hot paprika powder (optional)
4 slices of whole grain bread
1/2 red or orange bell pepper, sliced
Chop chicken, shallots and mango into bite-sized pieces.
Mix together shallots, yogurt, curry powder and hot paprika powder.
Combine yogurt mixture with mango and chicken pieces. Spread the mixture onto your bread slices, makes 2 sandwiches. Serve with bell pepper slices.
