Grass Fed Beef Pot Roast with Carrots and Potatoes

 

Quick and easy crock pot grass fed beef roast.

3  lbs of Topline Foods grass fed bottom round roast

1/4 cup tomato paste

2 tbsp balsamic vinegar

2 tbsp flour

1 lb carrots, cut into thick pieces

1 lb red small skinned potatoes

8 oz mushrooms (button or crimini)

6 cloves garlic, cut in half

1 sprig of rosemary

1 bay leaf

salt and pepper

In a slow cooker stir together tomato paste, vinegar and flour until blended. Add meat and turn to coat. Add carrots, potatoes, mushrooms, garlic, rosemary and bay leaf. Season with salt and pepper.

Cook on low heat, about 8 hours.

Discard rosemary and bay leaf. Thinly slice the meat on the cutting board. Transfer all the vegetables to a platter. Reduce the remaining cooking juices in a saucepan to make a sauce. Serve and enjoy.

Interesting fact: One medium potato with skin has almost half the daily recommended value of vitamin C and more potassium than bananas.
