Organic Chicken Breast with Spinach & Quinoa
4 Topline Foods organic chicken breasts
1 – 10 oz. pkg. organic spinach, thawed and drained
1 cup organic quinoa
2 cups water (or vegetable or chicken stock)
8 tbsps. Lemon Garlic marinade
1 tbsp. garlic olive oil
salt and pepper to taste
4 lemon wedges
4 tablespoons toasted slivered almonds
Preheat the oven to 325 degrees. Line a baking sheet with foil. Arrange the chicken on the pan and brush with marinade and sprinkle with salt and pepper. Cook for 25 minutes or until registers 165 degrees on an instant read thermometer.
While the chicken is cooking, add the quinoa to the water or stock and bring to a boil. Reduce to a simmer and cook until the water is absorbed, about 10-15 minutes.
In a small saute pan, heat the garlic oil and then add the spinach. Sprinkle with salt and pepper and a squeeze of lemon juice. Toss until heated through.
To serve, place 1/4 of the quinoa on a plate, top with 1/4 of the spinach and 1 chicken breast. Garnish with lemon wedges and sprinkle with toasted almonds. Enjoy!
