Indonesian Ginger Chicken

Servings: 6

1 cup honey

3/4 cup soy sauce

1/4 cup fresh garlic — minced

1/2 cup fresh ginger root — peeled and grated

6 pounds Topline Foods All Natural Chicken Drumsticks and Thighs, bone in

Heat the honey, soy sauce, garlic and ginger root in a small saucepan over low heat until the honey is melted.  Cool.  Arrange the chicken in one layer in a shallow baking pan, skin side down, and pour the sauce over.  Cover the pan tightly with aluminum foil and store in the refrigerator to marinate overnight.

To cook:  Preheat the oven to 350.

Place the baking pan in the oven and bake for 30 minutes.  Uncover the pan, turn the chicken over and raise the temperature to 375.  Continue cooking for 30 minutes or until the chicken has reached 165 degrees internal temperature and the sauce is a rich dark brown.

Serving Ideas:  Serve with couscous or steamed rice.
