Classic grass fed buffalo stew is so good for you and easy, too!
Buffalo is leaner than beef but contains about 25% more protein, along with higher levels of iron and vitamin B12. It has less calories, fat or cholesterol than either beef, pork or chicken. 1 pound Topline Foods ground buffalo
5 carrots, sliced
2-3 medium yukon gold potatoes, sliced
1 (28 ounce) can organic crushed tomatoes
1 (6 ounce) can tomato paste
1/2 yellow onion, chopped
4 cloves chopped garlic
2 teaspoons paprika
2 teaspoons thyme
1 teaspoon sage
salt + pepper to taste
1. Brown buffalo meat on stove.
2. Combine buffalo with all other ingredients in a heavy bottom dutch oven.
3. Bring mixture to a simmer and adjust heat to maintain a low simmer. Cook for about 1 hour or until the vegetables are at the doneness you prefer. If mixture becomes too thick you can thin it with some stock, water or red wine.
Keep in mind, this is a very basic recipe. You can add/change the vegetables to your liking and what you have on hand. Any root vegetables will be great. You could also add frozen organic peas, brocolli or green beans at the last 15 minutes of cooking to heat through. Also, you could substitute 2 cups of stock and 2 cups of red wine for the crushed tomatoes for an entirely different sauce!
