Add a little spice to dinner with this soup using Topline Foods organic chicken breast!
1 lb boneless, skinless Topline Foods organic chicken breasts, thinly sliced
salt and pepper
1 tsp dried oregano
1 tbsp olive oil
1 – 15 1/2 oz can hominy, rinsed and drained
1 – 14 1/2 oz can low sodium chicken broth
1/2 cup chopped cilantro
1 tbsp chopped chipotle chiles in adobo sauce
1 – 10 oz. package Topline Foods organic spinach, thawed, drained and chopped
1/2 cup chopped radishes
sliced or cubed avocado for garnish, optional
squeeze of lime, optional
Pat chicken dry, season with oregano, salt and pepper.
Heat oil in a large pan over medium high heat. Add chicken, turning occasionally until just cooked through, about 5 minutes.
Add the broth, hominy, cilantro and chipotles and bring to a simmer. Add spinach and cook for about 2 minutes. Serve topped with radishes.
